Homemade: Honey Glazed Ham
Our chef director, Ross Pike, shows us how to make melt-in-the-mouth glazed ham. Perfect for your Christmas dinner or festive party .
Ingredients:
2kg piece of green gammon smoked
2 litres of water
1 orange
3 star anise
30 cloves
10g coriander seeds
50g honey
40g fresh ginger, roughly chopped
1 onion, peeled and chopped
2 cinnamon stick
75g marmalade
50g grain mustard
Method:
Place the ham into a suitable size pan
Peel the orange, saving the peel, and divide into segments
Squeeze the orange segments over the ham and add to the pan with the peel
Cover the ham with the water, and place on the stove and bring to the boil
Remove from the heat and add the cinnamon, star anise, coriander seeds, ginger and onion
Place back on the heat and cook until a core temperature of 75c is reached, approximately an hour and a half.
Remove the ham from the pan. Place on a roasting tray and remove the fat
Score the top of the ham with a diamond pattern and stud with the cloves.
In a bowl, mix the honey, marmalade and mustard together to create a glaze
Pour the glaze over the ham and then place in a hot oven and cook until nicely glazed.
Once done, remove from the oven and either chill or carve and serve.
