And in Mediterranean dining, cooking over fire is fundamental in the traditions Mediterranean cuisine and is one of the reasons you’ll find Spanish Charcoal Ovens at the heart of Oakman’s kitchens.

What’s the Secret to the Flavour?

It’s in the coals

The FSC certified charcoal briquettes used in our Spanish ovens are produced from wood waste with no binders, providing an unspoiled chargrilled flavour to our dishes. The hexagonal shape tube of the briquettes allows for greater airflow, ensuring an even burn across the whole of the oven and providing a three-hour cooking time utilising the coals.

Working over the fire in front of our guests in the open theatre kitchens, our chefs adopt the traditions of cooking that are sincere and honest. Combining this technique with the finest seasonal ingredients enables the flavour of the food to speak for itself.
